Founded by Felix HernΓ‘ndez Monterrosa and Adriana Correa β€” the owners of Mezcaleria CUISH in Oaxaca City β€” Agua Del Sol is structured as a co-op, sourcing small batches directly from maestros and maestras across the Central Valleys. No contracts. Just trust, craft, and transparency.

Bottled as a destilado de agave rather than certified mezcal β€” a deliberate choice that keeps costs accessible and allows producer partners to maintain ancestral production methods without restrictions. A photo of every distiller appears on the back label.

Max Krassel fled Germany at age 16 in the aftermath of WWI and found a new life in the Sierra Cuicateca mountains of Oaxaca. He learned to distill, fell in love with the land, and built a custom continuous still that his grandchildren still operate today β€” three generations later.

Made from certified organic sugarcane grown at 1,200 meters elevation, harvested by hand, and crushed on-site with a mobile trapiche. The still produces no heads or tails. Diesel-fueled to protect the Sierra Cuicateca forests.

A tribute to the more than 35 native corn species of Oaxaca β€” and proof that Mexican distillation heritage is not limited to agave. Isidoro Krassel Peralta is the third generation of a family that has distilled in Santa MarΓ­a Tlalixtac for over a century.

Made from purple bolita heirloom corn β€” hand-malted on palm petates for 10–15 days, toasted on a clay comal, milled through a nixtamal mill, fermented with ambient yeasts, and distilled on a 12-plate column still the Krassel brothers fabricated themselves. Charcoal-filtered for 48 hours.

From the Mixtec highlands of San Luis AtolotitlΓ‘n, Puebla β€” a region where agave has been distilled for generations outside the Oaxacan spotlight. Yuku Savi means Mountain + Rain in the Mixtec language. Maestro FΓ©lix Macedas represents over 90 years of continuous family production.

A producer-owned label built on economic and social justice, environmental sustainability, and ancestral technique. Each expression is produced in batches of approximately 180 bottles. Wild agaves endemic to the Mixteca β€” Pitzometl, Espadilla, Mexicanito, JabalΓ­ CachetΓ³n β€” harvested at 12 to 25 years of maturity.
